I made this pie for a friendsgiving dinner this year and it was raved about! So much so that my friend about to give birth requested I make it days later for her baby blessing-way, where it was once more, a hit, and even deemed as, “the taste of desire!”
Rich, thick, chocolately, and made of clean & simple ingredients, this raw chocolate pie will be the gem on the table at any potluck or festive gathering.
*Note: The base of this pie alone is delicious, and you can really jazz it up to make it different each time if you so choose
Pie Filling
2 cups Soul Melody Cacao powder, or 2.5-3 cups chopped cacao
1 mini can (5.4 oz) coconut cream
1 can (13.5 fl oz.) full fat unsweetened coconut milk
1 cup dates
optional additions (**not necessarily all added together, just ideas to add variety)
1 tsp vanilla extract
1 tsp coffee/espresso powder (I used teccino french roast, which is an herbal “coffee”)
sprinkle sea salt
spices
drop of food grade essential oil (ex. peppermint, lavender, rose, orange)
1-2 tbsps rum
Soak the dates in hot water to soften.
Melt the cacao and coconut milk on the stovetop on low heat and whisk to blend until creamy and smooth, then transfer mixture to a blender or food processor and add the dates and other ingredients if you choose.
Crust
2 cups nuts (I used pecans and walnuts)
1/3 cup oats
1 cup dates, chopped
Add nuts to the blender and blend until fine, then add oats and dates and blend until doughy.
Scoop out dough into a pie plate and press until even.
Add the cacao filling to the pie and put in the refrigerator to set!
Toppings
Whipped cream would be extra decadent on top! I would make a coconut whip.
I shaved cacao off the block with a cheese grater and added rose petals.
You could also experiment with a fruity topping or sauce.
Enjoy tasting heaven in your mouth. And yes, this is a rich pie, there is a lot of cacao, so it will wake you and everyone up at the party!
